Cochinita pibil is a traditional dish from the Yucatan peninsula also known as puerco pibil or cochinita con achiote. It is a slow roasted pork dish and the preparation is a lengthy process to get the amazing mouthwatering flavors.
Cochinita means baby pig and the most traditional recipe is made with a whole suckling pig. The preparation involves marinating the meat in strong acidic citrus juice which tenderizes the meat and seasoning it with a paste made from the annatto seed. This paste is a vivid burnt orange colour and the flavours are amazing! The meat is then wrapped in banana leaves and slow cooked in a fire pit in the ground for hours. It is served with handmade corn tortillas, pickled red onions, refried black beans and an habanero sauce.
